Bake with Me: Grape Nuts Muffins

Hey Guys! So I don't know about you, but I personally had never tried Grape Nuts cereal until really recently. It always seemed like an older person cereal and didn't appeal to me that much. But thanks to Pinterest, my curiosity skyrocketed when I saw a 1950's recipe for Grape Nuts' Bread. It appears to have been one in a series of promotional recipes released by the company.

So my initial intention was to bake some Grape Nuts Bread, but I really don't need a whole loaf of bread at the moment. So I decided to look on the Grape Nuts' Website to see if maybe there was another similar recipe I could try and be able to cut in half. And that's how I got directed to Post's Website and found this recipe.

And on my YouTube, you can watch me make these muffins and see how simple that process was. These are very simple and straight forward muffins; I think that any level baker could make them. From Start to finish, including clean up, baking, and filming (plus taking photos) I was finished in under an hour.
In my Video, I mentioned that I would give tips on how to Half a recipe. So here are some tips:

1. Do the math and write it along side the recipe before starting

2. Have a conversion chart at the ready, it is really easy to half a recipe when you have a chart stating all the ways you can make half a cup. 4oz, 8 Tablespoons, 24teaspoons, ect.

3. When you need half of an egg, crack it into a measuring cup and beat it, then check how much egg you have either by the measuring lines or by weight, then measure out half. Same thing if you just need whites or yolks, except you separate them instead of beating them together.

4. Finally, if you want to really reduce a recipe, like to make only three muffins, I recommend consulting recipes that are specifically for two or three muffins to have an idea of how much they are using of each ingredient. When you are reducing a recipe, you need a very small amount of some ingredients which can really change the final product if your measurements are inaccurate due to not having measuring spoons that small.

So how did these muffins turn out? Fantastic! I think that if you like a not too sweet, semi-plain muffin, this is for you. It is the epitome of a muffin. I think that if you just used plain apple sauce and no chunks of apple that you wouldn't even know it was in there. It was not dry at all and was great both hot and cold. I would recommend it and personally I don't think anyone would notice if you didn't tell them it had Grape Nuts in it also.

So overall it is a 10/10 in my book. If you are interested in the Nutritional value, I entered the recipe into My Fitness Pal and here is what it broke down to:

So overall I feel they are a good option for part of breakfast or a snack. I know I will be making them again. Let me know what you think!
